Baileys ice cream is the perfect way to celebrate St. Patrick’s Day or any special occasion. It’s a boozy, decadent treat studded with chocolate chips that any Irish cream liqueur lover will enjoy.

This post excites me because I get to talk about two of my very favorite things in life: chocolate and ice cream.

With St. Patrick’s Day right around the corner, a Baileys infused ice cream seemed like the perfect pairing for these creamy chocolate truffles.

If you’re going to go all out with dessert, you might as well goall out, right?

Irish cream is one of my favorite after dinner drinks, whether adding it to some coffee or incorporating it into desserts like this no bake Irish cream cheesecake, I just love the flavor and creaminess of it.

Initially, I debated adding these truffles to the Baileys ice cream recipe but the thought of ruining the appearance of these gorgeous truffles just pained me.

Instead, I opted to double up on the chocolate fun by using chocolate chips in the Baileys ice cream and serving the truffles alongside it.

I’ve never been one to paint my face green, eat weird green food dyed baked goods or pretend like leprechauns are a real thing for St. Patrick’s Day.

But, I’m definitely down to embrace some Irish with a bowl of this Irish cream ice cream and a colossal truffle on the side after some corned beef tacos.

What Does Baileys Ice Cream Taste Like?

If I had to describe this homemade Baileys ice cream in one word it’d be decadent.

I’ve made my fair share of healthier ice creams likeChocolate Coconut Avocado Ice Creamand dairy-free ice creams like thisRoasted Strawberry Mint Ice Creambut this is not one of them.

Sometimes you need a dietary splurge and this ice cream recipe is exactly that.

The Irish creamliqueur adds its delicious flavor and helps make this ice cream super creamy.

With an egg yolk base, this ice cream recipe is already incredibly creamy, the Baileys just takes it to the next level.

The chocolate chips aren’t necessary (you can definitely omit them if you wanted) but I do love the texture (and of course the chocolate flavor!) they bring to help offset all that rich creaminess.

How Do I Make Baileys Flavored Ice Cream?

I used the egg yolk base method for this ice cream which involves tempering the eggs with the milk mixture before combining it all to create the thick and luscious ice cream base.

To make Baileys ice cream, I simply added 1/2 cup Baileys (you can use any Irish creamliqueur) to the milk mixture.

It’s one extra ingredient to a basic ice cream method that brings an enormity of flavor and richness!

Using alcohol in ice cream also helps keep the ice cream a bit softer when frozen than normal.

If you hate waiting for ice cream to thaw enough to scoop, this recipe is for you!

To churn the ice cream, you can use any ice cream maker.

I personally have the ice cream attachment for my Kitchen Aid stand mixer which works well enough for me.

I think stand alone machines might work better but I don’t really want to storeanother small kitchen appliance given how infrequently I make ice cream at home.

Now that we’ve discussed the ice cream, let’s talk about these truffles!

As a self-proclaimed chocolate lover, these colossal truffles are some of the most delicious chocolates I’ve ever tasted.

And guys, I’ve tasted A LOT of chocolate.

Truffles are my favorite of all chocolates because they’re basically a two in one deal.

You get two totally different textures in one chocolatey bite (which is way I love these coconut almond butter truffles so much!).

The colossal truffles are a recent addition but you’ll find a huge assortment, many from iconic artisans and chocolatiers with prices varying from as little as $20 all the way to $300.

I had so much fun sampling truffles from the 6 and 12 piece truffle sets, there wasn’t a single flavor I didn’t love.

Always partial to dark chocolate, I think that would be my favorite of the bunch and the one I loved pairing with a couple scoops of the Baileys ice cream the most.

Their colossal size (seriously, they’re quite large!) makes them perfect for sharing or just making it possible to try multiple flavors before feeling full on chocolate!

Decadent Baileys ice cream is the perfect way to celebrate St. Patrick’s Day or any special occasion. It’s a boozy, decadent treat studded with chocolate chips that any Irish cream lover will enjoy.

Ingredients

  • 1/2 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup Baileys Irish cream, or other Irish cream liquor
  • 1/2 teaspoon vanilla extract
  • 6 egg yolks
  • 1/3 cup sugar
  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Place heavy cream, milk, Baileys and vanilla extract in a medium sauce pan and bring to a simmer.

  • Meanwhile, whisk the egg yolks and sugar together in a medium bowl until smooth and well combined.

  • Once simmering, pour about half the milk mixture into the egg mixture while whisking vigorously so the eggs don’t scramble.

  • Once combined, pour the egg mixture back into the sauce pan over medium-low heat stirring constantly until thickened. This will take 2-5 minutes. Mixture will be slightly thinner than pudding consistency when thickened.

  • Remove from heat and let cool in the sauce pan for 15 minutes.

  • Pour the mixture through a fine mesh strainer into a large bowl to remove any solids.

  • Cover the bowl with plastic wrap, pressing the plastic wrap down on top of the mixture and refrigerate for 8 hours or overnight.

  • Once chilled, transfer mixture to ice cream maker and churn according to manufacturer’s directions.

  • Add chocolate chips 1-2 minutes before ice cream is done churning.

  • Transfer ice cream to a freezer safe container and freeze for 2 hours to freeze/set completely.
